I've been eating out a lot lately?both lunch and dinner?at restaurants because of my new job. None of my coworkers have lives, or waifus to cook real food for them, so we've been doing this thing where we all go out together for meals. It was fun at first, but my intestines do not approve.
This week I decided I'm going to cook a yummy meal every night and bring in leftovers for lunch instead!
I've already got a couple ideas, but what do you think I should eat this week?
Sunday - Sausage pasta
Monday - Steak and potatoes
Tuesday - Vegetable curry with rice (Saxton wants to do at least one vegetarian meal a week, which I think is a cool idea!)
Wednesday - Burritos
Thursday - Beef Stroganoff
Friday - Southwest Chicken

i really like beef stroganoff. i do a big bin at once, mix the noodles up with the sauce so it's all evenly coated and the noodles don't dry out.

I know to some people this looks like dog vomit. I like it with "stew beef".

You should add some beef and cabbage stir fry on there or maybe a southwest chicken mix.
Beef and Cabbage Stir-Fry:
1/2 lb beef
1/2 head cabbage
One carrot shredded, optional
1Tbs shredded ginger
Cut beef into bite sizes or strips or whatever, you can use ground too if you want.
Shred cabbage
in pot put some oil, ginger, garlic and the beef to brown
Throw cabbage in with carrot
let steam for a few minutes.
Done.
If you want to do a stir fry sauce I usually do 2Tbs Soy sauce, 1Tbs Siracha, 1/2Tbs Brown sugar with a dash of sesame oil if I want the nutty flavour it brings, ends up being a little spicy.
Pretty good and easy to make overall.
Southwest Chicken
1C uncooked white Rice
1-2C shredded chicken
15oz Black Beans
1C Salsa
2C chicken broth
1Tbs Chili powder
Mix it all into a pot evenly
Turn to high. Boil.
When boiling turn to low to simmer
15 minutes later
Fluff
Cheese it on top.
Wait for it to melt.
Green onions on top if you want.
EZ meals quick and cheap.

Day 1 of the meal plan! Sausage pasta -
Ingredients
- Sausage
- 2 onions
- 2 bell peppers
- 4 rainbow carrots
- 24 oz jar of sauce (rinsed with water to get every last bit)
- 1 package of pasta
Garnish, if you're fancy
- Parmesan cheese
- Parsley (basil would be good too)

Day 3, vegan curry!

From a friend who's a boss ass cook. Mangoes added on the side.
Into a blender or food processor, add:
- 3 or 4 tomatillos
- half an onion
- 1 jalapeno, seeds and pulp removed
- the zest and juice of one lime
- 1 or 2 cloves of raw garlic, peeled
- several branches of fresh cilantro
- a few pinches of black pepper
- a pinch of ground cumin
- salt to taste (a pretty decent amount)
Pulse until it reaches the consistancy that you would like. Dump the contents into a sieve over a bowl. Let drain for a few seconds, then dump into another bowl. Set both the drained salsa verde and the strained juices aside.
Add some neutral oil to a skillet and bring up to high heat. Apply salt and pepper to both sides of your mahi-mahi fillets (really, any reasonably thick, flaky white fish will work). Add them to the skillet and sear until they just start to take on color.
Flip them, pour a few generous splashes of the salsa liquid into the skillet, and cover. Steam for three to five minutes (more or less depending on the thickness of your fish). Uncover, and let reduce until you're back to frying, and the reduced liquid turns golden. Swirl the fillets to coat, then flip and swirl again.
Plate them, then top them with a pile of salsa verde. Sprinkle chopped cilantro on top. Add some sliced mango on the side. Garnish with a lime wedge.
For an accompanying beverage, I recommend some variety of island lager with a wedge of lime (Corona, Land Shark, Red Stripe, etc.). Sangria would also be nice. If you go with wine, it should obviously be a white variety.
If you have leftover salsa and strained liquid (you will), pour the liquid back into the salsa, stick it in the fridge, and eat it as you usually would, with corn chips. :)
