i never learned how to cook growing up.
so i'm subscribed to one of those services that mail me a bunch of ingredients and recipes and i follow the instructions and cook them.
i think it was good for me because they eased me into cooking.

if i'm making stuff for myself i usually just stir fry some vegetables. and try to consume my groceries before they go bad.
soon i'll have the time to try making something fancier.

Chicken Philly

Serves ~4.

Ingredients:

  • 1 big-ass chicken titty
  • 1 cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 red onion, julienned
  • 2 tbsp olive oil
  • chile powder
  • black pepper
  • sea salt
  • 2 tbsp butter
  • 1 tbsp flour
  • 2 fresh-baked demi baguettes
  • 4 slices provolone cheese

Procedure:

  • Heat the olive oil and saute the onion until thoroughly caramelized. Remove the onion from the pan and set it aside.
  • Generously treat both sides of the chicken breast to chile powder, black pepper, and salt. Throw that bitch in the pan and cook to 165 F. When done, wrap the breast in foil and rest for ~2 minutes.
  • Deglaze the pan with the vinegar and chicken broth. Add and melt the butter. Whisk in the flour and let the sauce cook for ~2 minutes.
  • Coarsely chop the chicken breast. Throw the chicken and the onions in with the sauce and give it a good stir. Let the chicken mixture cook until the liquid is absorbed.
  • Cut your bread lengthwise, add the cheese, and throw in some of the chicken mixture.

Dang that looks good! Nice recipe. Needs some veggies on the side tho. What goes well with it?
